Description
Pastore Brewing and Blending produce fresh and aged sour and wild beers.

The fresh series looks at accessible, fun, modern takes on mix-ferm brewing, utilising Kveik and Lactobacillus co-fermentation in fruited Waterbeach Weisses, Sour IPAs and Pastry Sours.

The cellar series is built around our house (mother) culture of Brettanomyces and lactic acid bacteria. We blend with different bases to produce an exciting range of aged wild ales, some in stainless steel and some as part of an extensive barrel program and blendery. Many of these beers are blended on fresh fruit in season.

Bottle at home. Pours black, nose is chocolate, liquorice, raisin, toffee, taste is similar, chewy, a little on the thin side.

Bottle, via Pastoreโ€™s online shop. Slightly muddy looking, medium gold. Light to medium haze. Some suds of white just about disappear. Nose has white wine. Grape must. Apple pomace. Plenty of oak. Touch of funk. Some leather. Smells good. Taste has a moderate, oaky, fruit sweetness. A little dry. Mouthfeel is pretty thin, verging on watery, with low carbonation. Lacks body and any kind of oomph, unfortunately. Finishes similarly thin. Started off great, but itโ€™s somewhat lacking overall.

375ml bottle @ Last Beer Tasting Before Lockdown 2.0 with Soph and Ewan. Hazed deep blood reddish brown, loose off-white bubbles atop. Aroma of creamy cherries, with sour wild elements. Taste produces excellent cherry flavours with nice raspberry hints, some gentle acetic notes confidently sour. Very good.

Bottle at home in Hackney - sourced from HOTM. Pours mostly clear gold with light sediment and a fading, foamy white head. Lovely apricot aroma. Lightly sweet with subdued acidity, decent juicy apricot, lemon, subtle oaky dryness, light funk. Light bodied with delicate carbonation. Quenching finish, more tart apricot, a little citric bite, nice dryness. Solid overall.

Bottle at home in Hackney - picked up from HOTM. Pours lightly hazed pale pink with a small, foamy white head. Nice juicy strawberry notes, sturdy acidity, lemony bite, nips of raspberry seeds. Light to medium bodied with fine to average carbonation. Quenching finish, more bracing acidity, fresh strawberries. Really good stuff.

On tap at BrewDog Cambridge Hazy gold orange colour lasting white head. Diacetyl aroma. eeek this is not good. dusty musty. not great .can I stop drinking this?

On keg at Brewdog Lothian Road. Appearance - hazy deep golden. Attractive white lacing. Nose - light sweetcorn but grainy really. Taste - still grainy, citrus too. Palate - light bodied, dry finish. Overall - a palate cleanser I suppose.

On keg at Brewdog Lothian Road. Appearance - peachy pink and opaque. White lacing. Beautiful. Nose - if I wasnt looking for passionfruit I'd have said it was pear. But passionfruit gives an extra level of aromatic and it's there all the same. Taste - tonnes of lovelyb sweet and stewed tropical fruit. Stone and berry fruit too. Palate - lusciously fruity and close to medium bodied. Long tangy finish. Overall - lovely gear.
