Description
Pastore Brewing and Blending produce fresh and aged sour and wild beers.

The fresh series looks at accessible, fun, modern takes on mix-ferm brewing, utilising Kveik and Lactobacillus co-fermentation in fruited Waterbeach Weisses, Sour IPAs and Pastry Sours.

The cellar series is built around our house (mother) culture of Brettanomyces and lactic acid bacteria. We blend with different bases to produce an exciting range of aged wild ales, some in stainless steel and some as part of an extensive barrel program and blendery. Many of these beers are blended on fresh fruit in season.

Can. Pours hazy peach skin orange. Grapefruit, lemon, lime, grapefruit juice, sharp, nectarine skin, funk, minerally. Medium body. Decent.

Can on the Bootle Brush thanks to Spin, 08/12/19. Murky fruit smoothie strawberry pink with a faded crimson cap. Nose is strawberry pips, grass, light plastic, floral tones. Taste comprises strawberry yoghurt, soda creme, strawberry chews, light lactic twang. Medium bodied, fine carbonation, light drying close with a modest pucker. Decent fruited linner.

13th November 2019
Can. Hazy gold beer, good pale cream colour head. Airy and dry palate, decent fine carbonation. Light malts. Slightly tart orange and lemon. Mild peel. Light dry finish. Tart citric linger. Okay - it’s a tart citric beer. Not much else to see here.

On keg at the Hanging Bat. Appearance - cloudy yellow to brown. Thin lacing. Nose - funky lanolin and citrus pith. Taste - not quite as dry as the nose suggests but more funk and citrus pith. Palate - light bodied, dry and sour through to the finish. Good persistence. Overall - like it.

On keg at the Hanging Bat. Appearance - cloudy golden orange. Slightly off white head. Nose - fresh orange and tangy sour. Taste - more of the same really. More sour than the nose suggested. Palate - light bodied, dry and tangy through middle and finish. Lovely dry and sour finish. Overall - good stuff.
