The Carillon Brewing Co. is an 1850s style brewery in the beautiful setting of Carillon Historical Park. It is the nation's only brewery in a museum.

Sample at the brewpub. The beer is a reddish-brown color with a thin light beige head that dissipates quickly to an outer ring. Short strings of lacing. Aroma of roast malt, fruit and caramel. Light to medium body with flavors of earthy malt, ripe fruit and caramel. The finish is fruity and malty. Decent overall.

Sample at the brewpub. The beer is a dark brown color with a thin light beige head that disappears quickly. Spotty lacing on the glass. Aroma of roasted malt and chocolate. Light-bodied with flavors of toasted malt, sweet chocolate and a hint of roasted nuts. The finish is roasty with a short malty aftertaste. Decent overall.

Sample at the brewpub. The beer pours a somewhat cloudy brownish-amber color with a thin off-white head that disappears quickly. Spotty lacing on the glass. Aroma of coriander, malt and hops. Light to medium body with flavors of grainy malt, fruit, hops and coriander. The finish is subtle cough syrup, spices and malt. Disjointed beer, slightly above average overall.
