Description
It seems simple.
Water. Yeast. Grains. Hops. That’s all it takes to make beer. But what we do with those simple ingredients within these walls is what makes us special.
Foothills began brewing beer at our West 4th Street location in March 2005, with three 15-barrel fermenters. Jamie and his brewers managed to crank out 800 barrels of beer that year, and doubled that output the following year.
As demand and production continued to increase, the need became obvious for more space. The solution came in the form of a 48,000 square foot warehouse a few miles away, an old manila envelope factory that was retro-fitted with brewing equipment and became Foothills’ main production facility, located at 3800 Kimwell Drive.
Today both brewery locations continue to produce our top-quality beers. We offer weekend tours from our tasting room at our main brewing facility. Conversely, if you ask nicely at the downtown brewpub, you can probably get a peek at the operation.

RBSG09 Grand Tasting notes (thanks to whoever brought it). Pure chocolate bomb. While it does a great job with creating a good chocolate flavor, I didn’t find a lot of complexity. Very good aroma, all chocolate but wonderfully intense. Tastes like rich, high quality semi-sweet to milk chocolate. The best chocolate flavor I’ve found in a stout, however it’s kinda one note stout in a field of deep, dark, gigantically complex entries. Preferred the CC 110k+ from that night by a fair margin.

RBWG 2010. Pours black with tan head. Aromas of roasted malts, bourbon and vanilla. Flavors of sweet chocolate, bourbon, roasted malts, vanilla and oak. Full body with average carbonation.

RBWG 2010 growler. Pours black with tan head. Aromas of roasted malts and chocolate. Sweet milk chocolate flavor and molasses with some roasted malts and espresso. Full body with soft carbonation.

Draft at Brewvival: Subdued dusty oak nose. Black, medium tan head, some lacing. Dark chocolate flavor, with a charred oak and unwelcome bitter grass finish. I’m not seeing what all the buzz is about with this beer. It seemed fairly average to me.

Draft at Brewvival: Peach and grass nose. Amber, thin head. Dry lime and apricot flavor with a lemongrass flavor. A different type of IPA, but a smaqll fish in a big pond.

Several pints at Sexual Chocolate Day 2010. Pours a watery, opaque black with a thin, slightly beige head. Aroma is mild, nutty, vanilla, milk chocolate as things warmed up. Flavor is very well balanced, sweet, vanilla, bourbon, wood, a little coffee, a little brown sugar, again more milk chocolate when it warmed up. Finish is sweet and smooth. This was really well balanced but honestly needed to come to room temperature to show what it really had.

Aroma: Cocoa, coffee, roasted malts
Taste: Bourbon, chocolate, dark malts and dark fruits
This is a very smooth beer. One of my favorites of the night.

22 ounce bottle courtesy of CrellMOOset. Thanks! Bottle #239 OF 694. Pours a dark brown color appearing nearly black in the glass. Medium dark brown head with good head retention and lacing. Aroma of chocolate, bourbon, buttered popcorn, honey, oak. The whisky note is fairly dry as is the aroam throughout with just a bit of sweetness. Taste is bourbon, roasted malts, bitter chocolate, oak, vanilla, tart cherry sweetness, raisins. Fairly strong alcohol warmth. Excellent beer.

bottle, Tampa gathering. pours dark brown, off-white head. aroma is full on barrel, bourbon notes, nicely picking up the Sexual chocolate aroma, reflected in the flavor as well with a robust chocolate dose. flavor, barrel, malty, plenty of chocolate, bourbon is all over this one, not overdone but well executed. Tasty.
