Was going to enter this as a spice/herb, but the peppery is quite mild, so the saison character is still dominant - Hazy gold pour - nose is fairly floral, herbal and lightly peppery - chiles are present, but rather subdued, adding some earthiness and only s slight spice that compliments the notes from the yeast quite well - soft and full in the mouth - chile presence is very subdued and quite well integrated - a bit of pepper flavor that works with the soft floral notes of the base beer and adds a touch of sweetness as well - only s touch of heat on the tail end works really well with the spicy notes of the yeast - quite good and a hell of a lot better than expected, despite a bit too much sweetness on the tail end.

Hazy raspberry colored pour - subtle nose of tart fruit skins and a tiny bit of spiciness - flavor has a lot more going on - tart, nearly sour, with moderate hibiscus and rose hip-ish acidity - earthy, nearly funky raspberry skin notes - peppery character on the tail end - lingering, dry, lightly tannic, mildly funky finish - quite good.

Lightly hazy copper - nose of tangy wheat, light peppery spice, a touch of earthiness - flavor is quite dry, peppery, almost flinty - wheat malt is soft and bready through the middle - a bit of yeastiness on the tail end - lingering peppery character - a light bit of huskiness in the finish, but otherwise tasty.

Bottle number 395 of 675 thanks to ratman! Pours with a murky, very dark brown body and a large, fluffy, khaki head that leaves good lace and has great retention. Aromas are of dark fruits, spicy oak, bourbon and a boat load of tannins. A lot of vinous aromas as well, red wine, earthy, jammy. Plums, currants, cherries, vanilla, saw dust and a lot of wood. Flavors are big in every way. Huge bourbon character with associated notes of vanillin, spicy oak, coconut. Lots of dark fruits, big alcohol, caramelization and bready malt. Long oaky duration. Cherries, fig, currants, boozy, dates, fruit rollup, leather. Cherry and chocolate. Earthier, dusty, leathery, and phenolic notes push themselves to the fore front as this beer warms. Tannic on the mouthfeel, pretty dry but backed up with a wall of alcohol. Medium to fuller bodied. Unique stuff and tasty for sure.

Bottle (with no clear bottling date) with much thanks to ratman. Pours with a murky, electric yellow hued body and an absolutely massive, rocky white head. Aromas are of sharply spicy, lots of grainy malt and robust base and wheat malt character. Grassy and peppery phenols, spices: grains of paradise, coriander, ginger. Lots of zesty and zippy citrus. Tangerine and grapefruit, a touch herbal. Great smelling wit. Great flavor too. Lots of biscuity, bready, grainy wheat malt, zesty, citrus and tart wheat with a peppery phenol and medium spice. Coriander, black pepper, tart. Lightly bitter citrus pith. Very nice floral esters. Lively bubbles, bone dry, floral throughout the duration. Amazingly good as are almost all the beers that come out of this facility. Really a great beer inspired by a traditional wit.

Tap @ Funkwerks Taproom. A stop on grand tour of Fort Collins breweries and bars with Tim, Aaron and Armin, Thanks !! Pours hazy dark yellow with a white head. Aroma is yeast, grapefruit, sweet spices, pepper. Taste is yeasty, sweet grapefruit ( more mellow and rounded than the typical "in your face" bitter grapefruit notes you get from IPA’s ) sweet spicyness fennel, white pepper. Medium body, soft carbonation, refreshing and lingering finish. All the beers we had at Funkwerks was very good, but this one was outstanding. 250212

Tap @ Funkwerks. Golden appearance with a white head that’s again gorgeous like almost of all Funkwerks offerings. Somewhat toasty/wheat malty, mildly spicy, floral aroma. More flowers in the flavor along with a light spiciness and wheat malts. A little disappointing from these guys but a decent one from anyone else.

Tap @ Funkwerks. The second "firkin" that Rene, Tim, and I tasted at Funkwerks along with the Green Tea Saison and this one didn’t disappoint either. Hazy, light yellow appearance with a white head. Very nice, grapefruit/orange/lemon citrusy, somewhat spicy, yeasty aroma. Delicious, spicy, lemon/grapefruity flavor that really complements the saison characteristics. The baby is a winner!
