Bottled. An unclear golden beer with a huge white head. The aroma has notes dusty hops, yeast, spices, and malt. The flavor is sweet with notes of pepper, yeast, malt, spices, and straw, leading to a dry lemony finish. Thanks pinball for sharing.

Bottle shared by someone at Paul and Ryan’s 5000th celebration, thanks! Poured a hazy gold with a white head that lasted throughout the beer. Aroma had a nice tropical fruit (slightly tart) note with some citrus, flora and a bit of spice and funk. Flavor was more funky with some earthy fruits and a hint of tart citrus and flora. A really interesting beer.

Tap at Funkwerks - interesting - like an ofest brewed with saison yeast, so the flavor profile is more like a biere de garde than anything else - malt forward at first - toasty and fairly estery - tartness through the middle leads to a drier, more Biscuity character - the peppery and dusty character of the yeast comes through near the finish - finish is estery, with light earthiness and funk - very good.

[Ever since this went from 7% to 8% it just hasn’t been the same - still good, but nowhere near the greatness of the earlier batches] Tap at Funkwerks - first of all, I love how their idea of an imperial saison is one that sits at 7% - awesome - nose is very crisp and peppery from the NZ hops - they also add a strong Sauvignon character - some spice and light phenols - flavor is fairly dry and semi tart - pepper character from the hops combines wonderfully with the spiciness imparted by the yeast - some Sauvignon white grape character - light funk on the tail end - love it!

Tap at Funkwerks - hugely spicy, perfume aroma- peppery, with aromas of ginger, citrus, lavender, rosemary - flavor is medium dry and very spicy - white pepper and ginger dominate - some orange peel and candied citrus on the end - lacks the yeast profile of a true it, but it is spicy and tasty - should probably be listed as a wit rather than a saison - tasty.

Tap at Funkwerks - more like a cross between a golden ale and a pils, but since they seem to use the same yeast for everything, I suppose the saison designation works - pils malt is showcased well here - smooth and lager-like - chalky a bit through the middle - a bit of spiciness from the yeast - peppery - yeastiness and a bit of perfumey aromatics - dry, biscuity finish - easy drinking and flavorful for something so light.

750 mL bottle courtesy of BeerandBlues2. Thanks! Pours a slightly hazy straw color with a large frothy white head. Good head retention and lacing. Aroma of bread and yeast with doughy and very dry fruit. The taste is dry, tart and almost olivey, dry citrus, some pale malts, spicy hop finish. Medium bodied. Nice beer,

(Had again atthe source - much more dry and funky/earthy - something must have been up with the lines at wynkoop - peppery and dusty - very tasty) Tap at Wynkoop - hazy golden with a rocky head of loose bubbles - a bit sloppy, this - carbonation is moderately effervescent - flavors of tangy wheat and pils malt up front, with a bit of toasty character - gets a bit sweet fairly soon after this, with some notes of banana and muddled esters - lacks the crispness I like in my saisons, so it is a bit watery through the middle for me - recovers fairly well on the back end, though, with some phenolic character and peppery qualities settling in as the beers dries out a bit - some earthy qualities through the finish, as well as some tangy citrus - this would be great if it were more crisp and dry, but it is actually still an above-average attempt for a brand new brewery - I will have to try a bottle to see if there is a difference.
