Description
Holy Goat is a Dundee based brewery specialising in the production of mixed- fermentation and wood aged beers.

Mixed fermentation refers to the use of unconventional yeasts and bacteria in brewing, which allows production of beers with unique character. We are driven by experimentation and are obsessed with the awesome flavours which can be achieved from mixed-culture fermentations.

Inspired by tradition mixed fermentation beer styles we seek to pay hommage to our brewing forbears, using new techniques, fermentation styles and the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer!

The breweries name references the tongue-in-cheek description of the ‘goat’ like qualities of wild yeast (Brettanomyces) characteristics. A reverence to this yeast and to the beers which display these characteristics is a strong part of the identity of the brewery.

440ml can. Pitch black with a small tan head. Aroma of dark chocolate, roast malts, liquorice. Taste is rich and boozy, dark chocolate, roast malts, dark fruits, raisin, liquorice, coffee, warming alcohol. Full bodied.

The taste is sweet and bold with rich roasted chocolate malt. Good carbonation. Finish becomes vinous and boozy.

Bottle at Nick's. Pours hazy yellow, nose is huge citrus, floral, some oak, taste is tart orange, lemons, chewy toffee, sweet.

Bottle from Cobbett's, Dorking. Aroma is vinous, apple juice, with a sugary streak. Hazy light golden amber. Thick foamy white head. Medium-heavy sour. Vinous. Funky. Fruity. Peripheral fruit sugar. Light-medium bodied. Thin if slick. Fizzy carbonation. Long dry somewhat astringent finish. A relaxed sipper.

375ml bottle. Pours hazy dark orange with a large head. Aroma is strong sour cheesy herbal lemonade. Taste has sour apple and herbal lemonade to start with a sour cheesy finish. Slightly burnt acidic aftertaste.

Bottle at home in Hackney - sourced from HOTM. Pours mostly clear honey-gold with a modest, foamy white head. Lightly sweet with a bit of throwback acetic twang, lemony bite, subtle funk, white grape, old wood. Medium bodied with fine, massaging carbonation. Pretty clean to finish, nicely rounded, modest citric acidity, balanced sweetness. Good stuff overall.

On tap at the junkyard, Nottingham. Jet black with a tan head. Aroma and taste roasted malty and treacle or syrup sweet. Growing liquorice. Really boozy body.
