Holy Goat is a Dundee based brewery specialising in the production of mixed- fermentation and wood aged beers.
Mixed fermentation refers to the use of unconventional yeasts and bacteria in brewing, which allows production of beers with unique character. We are driven by experimentation and are obsessed with the awesome flavours which can be achieved from mixed-culture fermentations.
Inspired by tradition mixed fermentation beer styles we seek to pay homage to our brewing forbears, using new techniques, fermentation styles and the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer!
The breweries name references the tongue-in-cheek description of the ‘goat’ like qualities of wild yeast (Brettanomyces) characteristics. A reverence to this yeast and to the beers which display these characteristics is a strong part of the identity of the brewery.

Keg at brewdog Lothian Road. Pours hazy pinkish, nose is strawberry, cream, funk, taste is tart, fruity, sweet.

Can. Pours very dark brown with a beige head. Roasted malt, dark chocolate, coffee notes, faint ash. AGood stuff.

Draught @ Mikkeller Bar Aarhus. Pours hazy yellow with a white head light lacings. Aroma of light sourness, ight malt, tart fruit, lactose, green peach, mango. Flavor is light sour, light malt, tart fruity, lactose, sour - sweet candy, green peach. Medium body, average carbonation, dry tart fruity finish.050622

Keg pour at Indy Man 2022 in a swimming pool. Pours light hazed pale golden with a white cap. Moderate tartness, peach, pineapple, apricot, white grape, sherbety funk. Medium body with soft carbonation.

Bottle online from Cork & Cask Edinburgh. Pours amber with a runy he, off-white cap. Loads of sweet strawberry jam on the nose. Taste is light to moderate tart with plenty of strawbs coming through, along with a light vinous balsamic note. Not hugely complex but would love to try another in a couple of years
