Description
Holy Goat is a Dundee based brewery specialising in the production of mixed- fermentation and wood aged beers.

Mixed fermentation refers to the use of unconventional yeasts and bacteria in brewing, which allows production of beers with unique character. We are driven by experimentation and are obsessed with the awesome flavours which can be achieved from mixed-culture fermentations.

Inspired by tradition mixed fermentation beer styles we seek to pay homage to our brewing forbears, using new techniques, fermentation styles and the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer!

The breweries name references the tongue-in-cheek description of the ‘goat’ like qualities of wild yeast (Brettanomyces) characteristics. A reverence to this yeast and to the beers which display these characteristics is a strong part of the identity of the brewery.

Can from Hoptimism. Jet black with a thick tan head. Aroma and taste are roasted malty coffee. Moderately bitter. Full smooth body.

Keg at Tiny Rebel, Cardiff. Pours berry purple with a beige cap. Aroma: tart tangy blackcurrant, funk, oak, vinous. Taste: light to moderate tartness, dry, tangy red berries, funk, light balsamic. Medium body with fine carbonation. Good one.

Can at Brewdog Cardiff. Pours black with a tan cap. Aroma: roasted malt, umami, liquorice, dark chocolate, char. Taste: moderate sweet & bitter, dry, rich roasted malt, umami, molasses, liquorice, peppery spice, dark chocolate, earthy, light ashy. Medium body with fine carbonation. Delicious old school stout

Keg at Mikkeller Exmouth Market, 28/05/22. Cherry red with a good sized crimson cap that stays for the show. Nose is tarte pink berries, stoned fruits, light brett dollop, funk, twist of lime. Taste comprises damp straw, berry pips, lime zest, lychee, grains, light funky edge. Medium bodied, fine carbonation, semi drying close with a light tangy edge. Solid easy drinking and approachable sour.

Bottle at Joe's. Pours deep ruby, nose is huge blackcurrant ribena, funk, oak, taste is tart berries, dry, funk, some of that balsamic goodness.

Bottle thanks to Stuu666. Appearance - a pleasant light grape red with a quickly disappearing head. Nose - earthy bramble and lozenge. Taste - blackberry and earthy. Liquorice and herbal. Palate - light to medium bodied. Tart finish. Overall - good.

Bottle thanks to Stuu666. Pours lightly hazed red with a pink-tinged thin white head. Aromas of red fruit, sherry, oak and tangy sour. Taste is blackcurrant, wood, sour fruit. Tangy finish.
