Description
Holy Goat is a Dundee based brewery specialising in the production of mixed- fermentation and wood aged beers.

Mixed fermentation refers to the use of unconventional yeasts and bacteria in brewing, which allows production of beers with unique character. We are driven by experimentation and are obsessed with the awesome flavours which can be achieved from mixed-culture fermentations.

Inspired by tradition mixed fermentation beer styles we seek to pay hommage to our brewing forbears, using new techniques, fermentation styles and the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer!

The breweries name references the tongue-in-cheek description of the ‘goat’ like qualities of wild yeast (Brettanomyces) characteristics. A reverence to this yeast and to the beers which display these characteristics is a strong part of the identity of the brewery.

Bottle shared at Thijs tasting. Hazy reddish brown. Sour cherries, vanilla, jammy, i erripe blackberries, roasted malts, red wine, oak, yoghurt, mint. Solid soir, medium sweet. Medium bodied.

A hazy deep golden beer with an off white head. Aroma of dry piney bitter hops, grapefruit, tangerine. Taste of resinous and piney bitter hops, grapefruit, tangerine. Long bitter finish.

Bottle thanks to McCash. Pours murky yellow with a short-lived thin white head. Aromas of passion fruit and light mango. Some sour funk. Taste is more mango and funk. Tangy, sour finish

Keg at the Hanging Bat. Pours muddy red-brown with no real head. Aromas of balsamic, red fruit and wood. Taste is mouth-puckering sour up front, layers of flavour underneath. Red fruit, faint smoke, leather, tobacco, vinegar. Dry finish.

Hazed orange amber topped with a big old lasting egg shell white head.
Nose is orange zest, grass, melon, pineapple, airy malts.
Taste comprises bitter orange, pine nibble, grass, grapefruit.
Medium bodied, light prickly carbonation, semi drying close spattered with grassy come lightly dankened hop bitterness.

Frothy white fair fully diminishing head. Dark red colour. Light malty and hoppy aroma. Some grapenotes. Moderate acetic noce rondo (red wine) flavor. Average nice finish. Oily palate. Intersting brew with same grapes as in my garden.

Creamy off-white good mostly lasting head. aArk amber colour. Oderate malty and light hoppy and moderate acetic aroma. Moderate bitter very nice sweet/sour flavor. Long finish. Creamy palate.

Keg at Cobbett's, Dorking. Dark and glossy. Dark brown tint. Creamy beige head. Aroma os sweet with a bitter edge. Dark fruits, molasses and coffee. Flavourwise it had low key polite sweetness amd a tangy berry and coffee edge. Underlying smooth creaminess. Medium bodied. Creamy with some sticky residue. Flat-soft carbonation. Long dry somewhat astringent finish. Enjoyable easy going stuff.
