In Gunzenhausen, mitten im wunderschönen fränkischen Seenland, pflegen wir noch echtes Brauerhandwerk. Traditionelle Biere, wie sie nur aus der traditionellen Bierhochburg Franken kommen, finden Sie hier genauso wie innovative Produkte. Wir lieben Bier und so brauen wir es auch.

Mit den Schorschbräu-Starkbieren führen wir einen Trend weiter, der sich Weltweit unter Bierkennern durchsetzt. Sehr Starke und handwerklich gebraute Biere mit ihrem unverwechselbaren Charakter sprechen den Genießer an, weit weg vom üblichen Einheitsbier.

Schorschbräu-Biere sind ganz klassisch nach dem Deutschen Reinheitsgebot gebraut. Durch spezielle Bierhefen, viel Malz und mindestens 4 Monate Lagerung erreichen wir sehr hohe Alkoholgehalte. Dadurch sind Kohlensäuregehalt und Schaumhaltbarkeit eher gering, das Aromaprofil aber sehr interessant und die Biere sehr dunkel.

Intensiv malziger Beginn, röstig, z.T. verbrannt schmeckend. Alkoholisch und doch süffig, die Röstnoten bleiben stark, dahinter trocken. Mittellanger Abgang. Nicht schlecht, könnte man aber noch besser ausbalancieren. 10/12/10/11/8/10

Bottle. Unknown vintage, at around BBF date. An oily pour reveals an unclear brown beer and no head. It's quite oxidized and alcoholic on the nose, with lots of treacle, soy and toffee. Some note of roasted malts, dark chocolate, prunes and dates and a touch of brown sugar. It's full-bodied, rather warming and soft on the palate, sweet, with next to no bitterness. Soy, treacle, oxidation, booze and some dark dried fruits, dark chocolate and a hint of tobacco in the flavor. Quite a lot of toffee too, and towards the finish some kind of bitterness show up. Rather warming and sweet finish. Lots of good things going on here, but please make sure you share the bottle with a couple of friends, this in not a beer to finish on your own. 210615

Doppelweizenbock of sorts – that is to say, as interpreted by this highly unusual German Schorsbräu project, once responsible for the strongest beer ever made without addition of actual alcohol. Thanks to Jan for sharing at Tim’s place; comes from a stone pitcher with swingtop in this case. Off-white, thin and open, loose head, quickly dissolving under influence of the alcohol on a dark chestnut brown beer with warm mahogany glow. Aroma of molten caramel, brandy, cola, port sauce, muscovado sugar, old madera, oxidized molasses, sweet sherry. Thick sweet onset yet somehow much less thick than expected; raisins and candied dates, soft carb if any at all, heavy vinous body still maintaining souplesse and drinkability. Deeply caramelly and toffeeish malts with brown-bready edge, herbal notes of thyme and clove, sweet cola and candied fig at the back, some very vague toasty bitterishness tucked away in the finish – and of course, a lot of warming, rum- and madera-like alcohol. Sweet, syrupy, intense and boozy as expected, but still this huge beer manages to somehow maintain drinkability and went down a lot easier than I was expecting. Schorsbräu at its least unrefined, I presume…

Bottle @ Home. Pours clear dark brown, no head. Aroma of roasted malt, caramel, chocolate, bourbon. Flavor is very sweet, rich malt, caramel, chocolate, bourbon, alcohol. Full body, soft carbonation, sweet finish with loads of warming alcohol. 080621

ABV: 18.2%. Clear dark brown colour with a small, virtually no head. Aroma is heavy malty, bread - dark bread, roasted, caramel, sweet malt, dark malt, rich. Flavor is heavy sweet with a long duration, rich, brown sugar, sweet malt, dark malt, vinous, dark fruit, dark bread. Body is medium to full, texture is creamy, carbonation is soft, finish feel is warming and light alcoholic. [20210605]

Clear to little cloudy brown beer, no head. Aroma: very malty, grains, soft roast, caramel touch, lots of cow fodder, bit yeasty, some overripe banana. MF: soft carbon, medium body. Taste: sweet, malty, lots of caramel, bit sweet, grains, hay, cow fodder, meh.

Bottle @ Højbjerg tasting. Small head with short duration. Color is dark brown. Aroma and taste are rich alcohol, caramel, malt, dried fruits and has a nice warming finish.
