This should be "Monks". 750 c&c from Total Wine in Sacramento, CA. Pours dark ruddy copper with a 3 finger foamy beige head. Aroma of dark roasty malt with dark fruit. Full bodied. Flavor is some rum spice, with indications of chocolate, and raisins or similar. I’d prefer plum/prune, but this works. Finishes just less than dry. No problem with alcohol (except in the brain). Good quad.

750 c&c from Total Wine in Sacramento, CA. Pours hazy light gold with a foamy/fizzy white head. Aroma of Belgian yeast/spice and coriander. Med body (thanks to carbonation). Flavor is a bit zest, a bit earthy, quite citrus/clove, and arguably coriander. It’s pretty tasty, and I think it’s one of the tastier wits I’ve had lately. Arguably a little underrated. I’m liking it.

Location: Bottle from Central Market, 4/29/14, Batch #4, Bottled on 1/13/14

Aroma: The nose of this one is clean citrus hops, some light-medium spice, and some yeast
Appearance: A hazed orange beer with a large, frothy, creamy, lasting beige head and heavy lace
Flavor: The flavor is lightly sweet, with a medium spice presence, and a medium bitter close
Palate: The body is medium, it has a lively carbonation, and a dry, slightly astringent, spicy finish
Overall Impression: The aroma was my favorite part of this one. The components just don't quite get to that same point from a flavor perspective. One issue is that the spice overwhelms the citrus a bit. Another is that there's a slight astringency that throws off the end palate/finish of the beer. There's some solid stuff here too, but the rest of the beer can't live up to the promise of the really nice aroma.

Batch #018. 750 c&c from Total Wine in Sacramento, CA. Pours very dark copper with a 3 finger foamy beige head. Aroma of roasty malt and celery. AKA Belgian yeast stuff. Med body or so. Flavor is rather peppery/spicy with chocolate and darkish malt. Kind of musty, but not like sweatsox/brett. Maybe like sucking on old dry wood. Could be some coriander. It sort of tingles all around the mouth. FInally I get it. It’s earthy. Sort of dirt aspects! Not barnyard. I’m diggin’ it.

750 c&c from Total Wine in Sacramento, CA. Pours hazy gold with a large frothy white head. Aroma is spicy, grassy, citrus, earthy. Tickles the nostrils. Med body or better. Hits like a tripel, but ... Hmm.... It’s a spicy, earthy tripel sort of thing. It’s Belgian allover. I’m not sure this fits the alleged style, but it’s very tasty stuff. Finishing like Grains of Paradise. And a sort of apple fruit ester. This is very unusual? Good tho!

750 c&c from Total Wine in Sacramento, CA. Pours hazy orange with a fizzy/creamy white head. Aroma is fruit, light malt and yeast spice. Med body or better. Flavor is banana ester, malt, yeast/earth and some peppery spice. Might be clove. Rather tasty.

750 c&c from Total Wine in Sacramento, CA. Batch 008. Opened with a decent pop, releasing a plummy cloud of vapor. Pours copper with a 4 finger frothy head. Aroma is something like plum, raisin cake and treacle. Med body. Flavor is treacle, raisin, plum/prune and a hint of chocolate. Certainly not dry, but it’s within a tolerable range of treacle. I’m of two minds about it, but it makes me eager to try something like a tripel. Likin this!

Bottle - Lots of bourbon and booze, with a little bitter chocolate. Jet black with a frothy beige head. Lots of bourbon and vanilla that gets stronger and finishes hot. Much to early, let it sit.

Bottle. Pours a clear gold with a fluffy white head that lasts throughout the beer. Aroma has notes of grass and sweet grains with a bit of light fruit underlying. Flavor is more sweet grains and sweet light fruit with some belgian spice and a hint of grass.

Bottle. Pours a hazy amber gold with a thick off-white head that lasts throughout the beer and laces. Aroma has notes of light pine, light citrus and grass with a bit of Belgian yeast backing. Flavor has a combination of sweet citrus and grass with a bit of floral coming through from the Belgian yeast notes.
