The Ale Apothecary is a very small artisanal brewery, located 10 miles west of Bend, Oregon in the middle of the Deschutes National Forest. Paul & Staci Arney built the brewery on their property in 2011 after Paul had decided that his career in industrial beer-brewing was officially over. Taking cues from historical breweries, Paul decided that he would take the very basic concepts of making beer and build a totally unique brewery out of them, relying on locally grown or foraged ingredients and using the most natural approach possible.
Before there were beer styles, there were just breweries making the best beer they could out of the raw materials nearby, the water from the ground, and the yeast in the air. Paul believes that the Process in making beer can be used as a primary ingredient, so The Ale Apothecary has its very own methodology that gives us our house character that cannot be reproduced anywhere.
We get our grain from Mecca Grade Estate Malt in Madras, Oregon. Our hops primarily come from Goschie Farms in Silverton. We naturally carbonate our beer in the bottle with Oregon wildflower honey and try to avoid any and all industrial processing aids or commodity ingredients. Instead of using exotic ingredients, we experiment with the process of making beer to find unique and inimitable flavors and experiences.

One of the highlights of the Epic Sour Tasting. Pours cloudy orange with great head and lacing. Coriander, some Belgian yeast. Some apple, finishes a little sweet with a little sourness. Really tastes like a Belgian strong, or quad, with some sourness. Citrus, good balance. Bottle thanks to Mr. Chopin at Epic Sour Tasting.

Bottle (Dated 3/23/13) shared at DC Annual Epic Sour Tasting, thanks MrChopin! Hazy yellow with off-white head. Aromas of funk, stone fruit, citrus. Tastes of stone fruit, tropical fruit, citrus, light tart, esters, wine. Medium-light body with a dry finish.

Bottle at Culmination Fest: Poured an orange with a white colored head. Aroma was citrus sour fruit. Taste was sappy fruit with a wine like character.

Bottle at Culmination Fest: Poured a orange color with a fluffy white head. Aroma was sour citrus fruit. Taste came on strong with sour bitter tart citrus fruit, but finished with a fresh grain pop at the end.

Bottle at Culmination Fest: Poured a golden clear with a white fluffy head. Aroma was sour with fruit and earthy funk. Taste was a mixture of berries, fruity hops, earthy, spice and finished sticky. Another beer where the nose and taste do not match as you would think, which makes it a very pleasant beer to try.

750 ml corked bottle. Bottled 10/18/13; 10.24% ABV. Aroma is bretty, vinegar, lemon, earth, light wood, fan-freaking-tastic. Pours hazy golden with a two-finger white head with decent retention. Taste is lightly sweet, sour (6/10 on a sour scale), finishing savory. Nice sauvignon blanc character, along with some green apple, peach. Not quite champagne-like in effervescence, but quite highly carbonated. Very different and unique.
