Description
Since our founding in 1823 (Bunsei 6) in the late Edo period, we have been brewing sake
in the Kaga Plain, overlooking the sacred Mount Hakusan. Tengumai is beloved in the Hakusan region of Ishikawa Prefecture, and thanks to many people , it has become a sake enjoyed throughout Japan and the world. We brew sake that is not only easy to drink, but also has a true "umami" flavor that reflects the "culture" that lives and breathes in this region, while incorporating the sensibilities of the times without ever being trendy.

Drank at room temperature. The color is golden yellow. The olfactory intensity is high, and the olfactory persistence is sufficient. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas find hints of almond, spices and umami, for a delicate aroma. The first impression of intensity in the mouth is of medium strength’s sake. The aroma on the tongue is rather dry. The body is full. The gustatory intensity is high, and the persistence is sufficient. The taste is pleasant. The final mouth sensations are of drinkable sake. The roof of the mouth carries notes of kiwi, cooked pear, melon, fruit, apricot and mushroom.

From bottle at sakagura. Treated myself to nice Japanese night out. Very clear pour slight nose of aged sake. Tastes super smooth since aged daiginjo. Some cedar perhaps, coconut, melon, sauvigon blanc, and rice. Very good.

Bottle from Yamamoto. Solid rice aroma, koji, light esters and spice. Typical junmai. Clear, slightly oily and bubbly. Rather dry flavor with some fruity and rice sweetness. Melon and peach, with nice dryness and alcohol burn. Not super complex, but hearty and rooted. A well-done junmai.

Bottled@SBWF2012. Slightly hazy pale yellow colour with no head. Aroma is fruits, some rice and mild floral notes with some mild herbal notes. Flavour is fruits, rice, some mild resiny and sprucelike notes. Balanced and quite mellow saké.

Very yellow color. Strong rice aroma, slight caramel or mizuame, koji. Rich rice flavor, yamahai tang / funk, some candy sweetness, alcohol, fruit, even a bit of citrus. Rather co plex, with good umami, though overall not breathtaking. A bit too much roasty rice forward for my tastes

Glass, chilled, at Okariba in Kyoto. Fruity, estery citrus nose with koji and some funk. (Yamahai). Yellowish color. Nice citrus flavor with a bit of funkiness. SMooth and silky. Nice stuff. Great with the mountain vegetables and roasted locusts.
