Glass at Jam. Yellow, clear, shiny. Nose of caramel, vanilla, cream. rice pudding. Sweet caramel and vanilla and rice flavors. Great yamahai.

Cup at Kunitaya, one aged from the bottle, one fresh from a cask. The fresh one was very yellow and cloudy with a big rice nose, caramel and cream, some acid. Very grainy flavor, raw, sweet, vanilla and melon. Young and unrefined. The aged one was superior, very smooth, nicely acidic, less grainy. Rating for the bottled, properly aged version.

Glass at Kunitaya. Bottle aged 3 years at the brewery. Yellow and oily, very rich and smooth. rice nose, umami, caramel. Nice sweetness and good acidity. Solid. Not as complex as the Ginjo, but smoother and a bit richer on account of the age.

Glass at Kunitaya. Yellow and oily looking. Nose of rice, caramel or mizu-ame rice candy. Nice acidity, sweet caramel rice. Very smooth.

Glass at Jam. This was the Omachi rice version. Lightly funky nose, full rice, grainy, a touch of caramel and yogurt. Slightly hazy, oily appearance. Great acidity, fruity, orange, mango. Lovely and elegant with great acid tartness.

Glass at Wachi. Funky-ass nose, with rice, dust, caramel, milk, pepper, and after time, the men’s urinal. Yellow and oily. Sweet caramel flavor with funk, pepper, dirt, half-rotten peaches, moldy wood, and grapes. Very rich and smooth. Absolutely wonderful and interesting, challenging and flavorful yamahai.
