Glass at Wachi. Amazing price on this 22% Daigin. Huge spice and fruit nose, very dry, with lots of ginjo-ka, oranges, dust. Clear, almost watery looking. Clean and crisp, fruity, very refined, with great fruits. Very nice sake: clean and ethereal. Possibly a bit too refined, but nice to try.

300ml bottle from Yamamoto. Big, fruity, flowery ginjo nose. Orange and lemon, melon, apricot, pepper, a touch of clove. Clear, icy, shiny. Sweet and fruity, yet not cloying and very clean. Fruity esters, apricot, a touch of mango, peppery finish. Very fresh, crisp, medium to full body but not heavy. Sweet, but alcohol just about balances.

Bottle at Sushi of Gari (which is a kick ass place albeit pricey in NYC). Pours eggshell with nice floral and fruity nose. Tastes of honeydew, rice, floral with semi-sweet finish. Its rich and clean, very pleasant
