Description
In 2001 "Hakurakusei," was released exclusively to special distributors. At a time when only the words "aperitif" and "after-dinner drink" existed, Hakurakusei was a pioneer in the field of "in-dinner drinks," aiming to create a sake that would complement any dish. In 2018, Watanabe Nanami (22 years old at the time) took over as toji (chief brewer), becoming the youngest female chief brewer in Japan. Even after stepping away from the role of toji, Shinzawa continues to guide the brewing process with an eye toward the sake that customers drink.

Drank at room temperature. The consistency of the liquid is clear, colorless and transparent. The olfactory intensity is normal and lasts sufficiently. The taste on the nose - secondary aromas is directed towards fruit, dried apricot and mushroom, for a floral aroma. The first impression of intensity in the mouth is of powerful sake. The aroma on the tongue is rather dry. The body is full. The taste is pleasant. The roof of the mouth carries notes of white melon, dried apricot, mushroom and spices.

Bottle from Tokyo Station consumed on the Shinkansen. slightest yellow tint, oily. Nose of rice, citrus, apple, some sweet fruit, then rather dry and slightly hot finish. Citrus, pepper. slick and light but a bit too sweet in the middle.

Drank cold (recommended temperature). The nose taste - dominant aroma ends up on rice. The nose taste - secondary aromas is mainly directed towards koji. The olfactory intensity is high, and the olfactory persistence is appreciable. The appearance of the liquid is cloudy. The body is structured. The aroma on the tongue is rather dry. The taste intensity is high, and the taste persistence is good. The taste is very pleasant. The final mouth sensations are of excellent sake. The finish is long and clean. The aftertaste is intense. The roof of the mouth returns hints of melon, fruit, honey and pineapple.
