Description
Founded in 1711. Since our establishment in 1868, when we were ordered to brew sake by Ii, the feudal lord of Hikone, we have continued to brew sake by hand as in the olden days. The name "Kinkame" is derived from "Kinkame Castle," another name for Hikone Castle. While we have modernized our facilities over the years to meet the demands of mass production, we have also rediscovered the profound appeal of small-batch, handcrafted sake.

Drank cold. The appearance is crystalline. The color is amber tending towards brown. The olfactory intensity is high, and the duration is appreciable. The taste on the nose - dominant aroma is grainy. The taste on the nose - secondary aromas traces hints of Passito Wine. The first impression of intensity in the mouth is of solid sake. The body is structured but ductile. The taste intensity is very high, and the taste persistence is good. The taste is enjoyable. The final mouth sensations induce compulsive drinking. The finish is dry, clean, thirst-quenching and complex. In the mouth the aroma is that of fruit, resin, oak, soy, white flowers, mimosa and white mushrooms.
