PROGRESSIVELY OLD SCHOOL
We make craft beer with a throwback approach. Through a combination of time-tested brewing/blending methods and modern practices, we create beer that is complex, thought-provoking, and above all delicious.
AN ALE PROJECT
We focus on truly slow beer – mainly Farmhouse Ales and Saisons in our wild brewery and lagers on our clean production side – with a passion for experimenting with other wild and traditional styles from Imperial Stouts to IPAs to Dutch Kuits.
ROOTED IN FAMILY
The name Birds Fly South is a nod to founders Lindsay and Shawn Johnson. For the last 22+ years, they lived the Coast Guard life, migrating across the country. Their family, their flock, was always looking to find their back to the south. Once they landed in Greenville, Shawn’s final station, they knew they had found home.

Sour acid and pineapple aroma, clear yellow color. Taste is strongly acidic with very mild sweetness. Slight funk at the finish. Mild mango flavor.

Can from Whole Paycheck. Pint glass @home. Weak head, opaque but trying to clear up gold pour. Vinegar & mango nose. Simple sour. Lemonade, pineapple core, yeast. Snappy carbonation. Thin. Pretty basic.

From a pint can. Pours a clear gold with a small white head. Aromas are tart fruit. Flavors are sour — too much so for my taste.

On draft at Dominion Wine and Beer. Pours a cloudy pale gold with an off white head. Aromas of herbs and spices. Flavors are moderately bitter orange with some fruity sweetness.

Opaque amber color. Strong floral aroma. Taste is sweet malt underneath, moderate floral bitterness, some citrusy flavor . Not typical for an ESB, needs more caramel or toasted malt flavors.

Reddish brown color with a sour aroma. Flavor is very sour typical of Flanders with a woody taste, cherry and over ripe dark fruit, mild sweetness at the finish.

Can from Tavour. Pours dark brn/blk with a large finely foamed tan head. Aroma of toffee, maple, and hints of burnt malt. Med body. Flavor is toffee, maple, hints of burnt malt. Not dry; not sticky. Burnt malt bitter. Heat can be found if sought for. Seems like it should be bigger. Decent drink.
