16.9 ounce screw top bottle purchased from the HotD website - consumed about 1/3 of the bottle and am saving the rest for another day - lightly hazy ruby - deep nose of treacle, raisins, fig, port, Madeira, cherry, oak, light butterscotch - bottled still, but the heft still makes a substantial mouthfeel - sweet and port-like, but with earthy and oxidized sherry notes - subtantial depth from the spirits barrrels - brined cherry, treacle, chocolate, raisin, fig, oak, charred sugars - hints of earthy peat in the finish, which is long and warming - so much depth - an amazing sipper that satisfies similarly to sipping a good whiskey - thanks to the screw top bottle, I’ll have to savor this a few ounces at a time for as long as I can.

8 ounce at the Congress Park location - viscous black pour - headless - rich nose of rum, oak, fudge, cinnamon, vanilla, underlying umami - thick, chewy mouthfeel - expected level of sweetness, but not cloying - lots of chocolate, espresso, vanilla, oak, cinnamon, rum, caramelized sugars, light umami underneath cuts the sweetness - long, deeply complex charred maltiness throughout the finish, bordering on smokiness - it’s dang good.

10 ounce at the Congress Park location - hazy gold with very light soapy lace - lightly carbonated - a nice mellow lacto tartness throughout, with underlying buggy funk, white grape, deep oak, pineapple - light, subtle, and balanced - a good sour ale for summer.

10 ounce at the Aurora Arts location - clear light gold - clean, bright, and light - lightly sweet malt base that knows to get out of the way for the hops - even so, hops are not as assertive and bitter as they need to be in this style - they’re there, mildly dank, lightly citric and peppery - but they have no “pop,” and that light malt character still comes in to swallow them up in the finish - I think I’ve had enough of these to definitely say this brewery is not good at making West Coast IPA.

10 ounce at the Aurora Arts location - hazy dark gold - nose of sweetened lime juice, light buggy funk, Chardonnay, oak - flavor is lightly sweet up front (with that abv, not a surprise), but gets tangy and then moderately sour/acidic late - mostly lactic tartness - notes of lime, peach, white wine, moderate oak - tart finish with lingering oak - it’s good, but not their best effort in this department.

500ml bottle - as has been noted by previous raters, this one is heavily spiced with winter spices (nutmeg, clove, allspice), and this infusion distracts (and detracts) from the enjoyment of what is otherwise a solidly-made quad - nice carbonation - peppery and dusty yeast presence - dark fruit - drying, earthy, complexly phenolic finish - the spices finally get out of the way in the finish, but really make the overall experience less than it could be - sometimes less is more, guys.
