Belgian Style Sour Ale with Cherries
Tahoma is very similar to the Devils in process. The only difference is the base beer and the varietal of cherry, so much of this applies to both Krieks. To add depth and complexity, we use a blend of both house yeasts. The clean fruitiness of the Abbey, and the subtle fruit but dry, lager like breadiness of the Kölsch play well with what we’re going for. The base beer is allowed to ferment all the way through. As the beer is being racked onto cherries in the totes, a portion of Brett beer is added to aid in the inoculation. Then we seal em up and send them safely to the warehouse. The rest is out of our hands. We have to let go, and let it do its thing. If we’ve done our job right, and kept things clean, everything should be fine. We check on it from time to time to see how it’s progressing, but let it sit. The anticipation is wonderful…

375 ml bottle into tulip glass, 2017 vintage. Pours slightly hazy medium golden yellow color with a small foamy off white head with poor retention, that reduces to nothing pretty quickly. No lacing on the glass, with a fair amount of streaming carbonation. Aromas of big sour/tart/tangy red/black cherries, fruit skin/pits, lemon, lime, orange, peach, pear, apricot, pineapple, melon, red/green apple, white grape/wine, peppercorn, hay, straw, grass, wheat, cracker, and white bread; with lighter notes of leather/musty/lacto funk, white wine vinegar, and yeast earthiness. Damn nice aromas with great balance and complexity of cherries, fruity/funky/acidic/spicy yeast, and pale/wheat malt notes; with big strength. Taste of big sour/tart/tangy red/black cherries, fruit skin/pits, lemon, lime, orange, peach, pear, apricot, pineapple, melon, red/green apple, white grape/wine, peppercorn, hay, straw, grass, wheat, cracker, and white bread; with lighter notes of leather/musty/lacto funk, white wine vinegar, and yeast earthiness. Light-moderate fruity/lactic tart/sourness, fruit tang, and yeast/oak tannin spiciness on the finish. Lingering notes of sour/tart/tangy red/black cherries, fruit skin/pits, lemon, lime, orange, peach, pear, apricot, pineapple, melon, red/green apple, white grape/wine, peppercorn, hay, straw, grass, wheat, cracker, white bread, light leather/musty funk/vinegar, and yeast earthiness on the finish for a good bit. Fantastic complexity, robustness, and balance of cherries, fruity/funky/acidic/spicy yeast, and pale/wheat malt flavors; with a fantastic malt/tart/sour/spiciness and tangy fruit balance; with no puckering/astringent flavors after the finish. Fairly crisp finishing. Light-moderate increasing dryness from lingering tart/sourness, tangy fruit, and carbonation. Medium-plus carbonation and body body; with a very smooth, moderately creamy/grainy, and acidic/tangy/tannic balanced mouthfeel that is fantastic. Minimal warming alcohol for 9.9%. Overall this is a fantastic fruited sour/wild ale. All around fantastic complexity, robustness, and balance of cherries, fruity/funky/acidic/spicy yeast, and pale/wheat malt flavors; dangerously smooth and fairly crisp to drink for the big ABV, with the modestly acidic/tangy/tannic/drying finish; not overly lactic/tannic. Amazing balance of big juicy/jammy cherries and Brett/Bacteria complexity; with great clean pale/wheat malt backbone against acidity. Minimal residual sweetness with crisp dryness. A highly enjoyable offering, and outstanding spot on style example. Not overwhelming on any aspect.

Bottle purchased in USA and shared in Rome with daniele. Semi clear golden color with a short-lasting lacing. Nose is wild yeast, a bit cheesy, mild red fruit (sorry, never had these kind of cherries). Mouthfeel: wild sour funky taste, sourish fruitiness. Far too wild imo.

Very cloudy golden and honey coloured body with a fairly thin, single centimetre tall pure white cloudy head along with some raw honey highlights and a nice mellow golden tint at the light. Aroma of sour cherries, nice oak, funk, yeast, bread, alcohol, sugar and a bigger dose of apricots and soured fruit - nice and incredibly aromatic. Medium to Full-bodied; Strong assertive alcohol bite at first with a slightly bitter fruit note with peaches and apricots strongest, but the cherry flavour is definitely noticeable along with some apples and pears near the end. Aftertaste shows a great robust character of alcohol, oak, dry grain, honey, sugars, yeast and way more cherries, all with the funky yeast strain and brett-like flavour. Overall, good balance between a sour, a dry saison-like beer, a fruit beer and an American Strong (due to the alcohol content) that is incredibly complex and not shy of pungency. Great to sample and well worth keeping on hand for 2.5 years! Even nicer to have at home celebrating my son's first night at home. I sampled this 37,5 cL bottle purchased from [great beer store] Belmont Station in Portland, Oregon on 03-May-2015 for US$13,51 just after my second daughter was born [she was with me when I bought this], sampled on the first night my son was home with us on 04-November-2017.
