Brewed with a base of Pilsner malt, spelt, and oats, this beer wasn’t boiled during the brewing process and was instead just whirlpooled warm with a small amount of Azacca and Galaxy hops. The beer was fermented in stainless with a blend of lacto, brett, and sacch cultures, before being transferred to Sauvignon Blanc barrels. The beer spent about 5 months in barrel, before we added fresh lemongrass stalks and pink Himalayan sea salt before transferring back to stainless. Finally we packaged the beer with champagne yeast and let it condition in bottle for about 2 months.

Pale and slight haze. Somewhat of a dullish yellow. There's some lemongrass, lacto, a bit of lemony, floral hops. On the palate, it's bright, the lemony notes shine, the hops lending a nice floral touch, and the vinous barrel character is really nice, rounds it out. The acidity goes juicy and clean, too. Well-balanced.

Aroma: woody, grapes character, lemony.
Taste: along the same lines, not very acidic, lemony.
Overall: not bad.

375mL bottle, pours a hazy dull golden blonde with a small white head. Aroma is full of saline, with some nice wild critters, a touch of citrus, and maybe a hint of lemongrass. Flavour is buggy and salty, with a nice expression of wild yeast, saline, citrus, and dry oak. I could do without the salt, as the bugs are nice. I don’t get much white wine either. Nice wild yeast expression, but the other stuff is a bit of head-scratcher.

Poured from 375mL bottle (thanks Toni CaptainMurphy). Hazed blonde with minimal white head. Tart sour with Sauv Blanc notes upfront, soft salty lemongrass on the backend. Not totally cohesive, but decent.

375mL bottle. Pours hazy blonde with a white head. Plenty of wild yeast and salt on the nose; some bright lemongrass and white wine as well. Flavour has lemongrass, salt, nice white wine character and a good yeast profile; a touch phenolic. The salt is weird and overall it feels a bit clumsy, but it's not bad.
