A blend of dessert, culinary, bittersweet and bittersharp cider apples grown in Wales without the use of chemicals. Hand harvested. Fermented slowly over winter with native yeasts. Bottled between Candlemas and May Day. Bottle fermented over summer with native yeasts and bramble and clover honey harvested in Bro Ddyfi late in the summer of 2022. Riddled and disgorged to finish. Then left be. 7.5%. 750ml.

Golden copper with a white cap that thins to the edge.
Nose is earthy apple, funk, tannins, herb.
Taste comprises bitter apple, barnyard bite, tannins, orchard wood, apple skins, funk, light acidic tickle.
Medium bodied, soft carbonation, drying close punctured with a funky undertone.
Solid.

13/8/2025. Bottle shared by danlo, cheers Ed! Nice funky, apple aroma with flowery honey notes. Quite dry. Well balanced. Very nice.

750ml wired cork bottle. Opened with a pop. Deep golden colour, foamy white head that dissipates to a thin layer and aroma of ripe apple, fleshy fruit, funk. Taste is sweetish, tangy, tart, appley, floral, alittle honey, vanilla note, and funky hints along with drying loamy tannin. Medium bodied, spritzy carbonation, dry earthy tannic finish. Nicely drinkable.
