Pastiche is a barrel-aged blend of four different ales aged in twice as many barrels. The beers in this blend use various local malts and were created specifically for Pastiche by our team of senior brewers. Barrels included in the aging process were: rye whiskey, vermouth, port, rum, bourbon, red wine, gin, and brandy. After aging the beers between three and four months, the brewers got together and blended them all into a single, unified whole called Pastiche. This complex amber beer contains notes of caramel, dried fruit, spirits, and oak.

Crisp copper coloured body with a small two centimetre tall tan head. Aroma of spice, yeast, pungent grain and bread and ending with a smooth and noticeably sweet caster sugar scent. Medium to Full-bodied; Strong yeast and grainy flavour that shows through everything, with some specialty grains, rye and oatmeal all around the edges with a lot of sugars, some light fruits and a dash of toffee and even some coffee near the end. Aftertaste is pungent from all the spices and especially the specialty grains that are noticeable above the sugars and yeast funk that is still quite large. Overall, an elegant and well-nuanced beer that has some spices that come out, a good deal of sugars, but also some complex barrel and other 'off' flavours that are noticeable as well, such as coffee and tobacco. Nice to sample, especially on draught, even if at such a high price and premium. I sampled this five ounce pour on draught for US$5,00 at Rattle 'N' Hum (West) in New York, New York on 11-March-2018 while waiting for my train home to Washington!

Tap. Ours clear reddish hazel, small beige head, good lacing. Aroma is light, bourbon, caramel, toffee. Flavor is medium sweet, light bitter. Medium body.

Tap at Dive Bar, Worcester. Color is slightly cloudy dark orange with small white head. Aromas and flavors: Dryness, dry fruits, some chocolate, some vineous elements, dry coffee?, berries, some distant hints of whiskey, spme distant hints of berries, wood and malts. Very versatile beer. Little bit of confusing but this one is actually very interesting. Surprisingly good drinkability too.

Pours deep bright mahogany into a snifter. Off-white head with excellent retention recedes leaving scant sheets. Sour pit fruit, rum and bourbon aromas. Thick with sweet cherry, plum and hot caramel upfront turning to dry oak in the lasting finish.
