The Mach-Limit series is our most fruit-forward offering. We combine mature light and golden sour base beer (aged in our stainless steel solera vessels) with an amount of fruit to nearly the limit allowed by law. The result is vibrantly colored beer-fruit hybrids that defy classification and demonstrate the versatility and depth in our house coolship-caught microbes. Inoculation Method(s): Solera Description: MACH-LIMIT starts with wine grapes from locally-sourced, family-owned vineyards in Palisade, CO. Once the grapes have been destemmed and crushed, we allow the juice to rest for a few days - developing rich color and depth of flavor - before finally transferring the juice to neutral oak barrels along with our base Golden Sour. The beer then goes through a secondary fermentation while resting on the grapes, and after a few weeks is ready to bottle. MACH-LIMIT is fruited at the highest limit allowed, thereby creating a beer that is truly something of a hybrid with intense grape character - almost sangria-like. This beer should age well with proper cellaring, however the grape character may diminish over time. Batch 2 - Cabernet Sauvignon from Colterris: February, 2017 / 750mL Bottles / Limited

Sampled from svartvit, thanks! Foeders Vivre Lambic event. Clear ruby with no head. Sour grain, grapes, red wine. Moderate sour. Medium body and low carbonation.

Bottle thanks to Derek. Pours a cloudy purple with small off white head that diminishes quickly. The aroma is strong grape skin and oak. Thin body, grape, oak, light funk, nice tartness, vinous, light dry finish, enjoyed this.

7 3 7 3 14 Bottle at Oedpus, Carnivale Brettanomyces opening party 2017. Very hazy brown with no head. Aroma of soft dark fruit, prunes, raisin, vinous, lightly tart, caramel. Flavour is moderate sweet. Medium bodied with soft carbonation. [22/06/2017]

Bottle at Oedipus, opening party for Carnivale Brettanomyces ’17. Dark color, no head. Aroma’s of fruit jam, limonadesiroop, sourish. Retronasal it’s syrup, sweet & sour, fruit, red wine, tannines. Flavor is moderate sweet, moderate sour, vinous (red wine). Medium bodied. Long finish. Hard to tell where the beers ends and the wine starts, but I quite like it.

Bottle at Oedipus. Super deep purple with barely any head. Super jammy grapes, soft tannins, light hay, grape skins, red berries. Light sweet, bitter and sour. Medium bodied. Very fruity and lots of wine indeed. Nice.
