Dark Ale Fermented with Brettanomyces and Aged on Raspberries
The liquid equivalent of biting into a raspberry-filled dark chocolate cake. Aromas suggesting mixed berry and roasty cocoa meld with flavor notes of tart raspberry, cherry, and subtle coffee. Even without the addition of chocolate, Ganache gains its cocoa notes from a robust grain bill featuring Special B, caramel malt, raw wheat, oats, our 2-row base malt, Midnight wheat, and black malt. This dark burgundy-colored beer is fermented in stainless with both our house yeast and Brettanomyces claussenii before aging on fresh, local raspberries. No utensils necessary.

Draft at Release the Funk 5. Dark clear maroon color, beige head with a pink tinge. Aroma of chocolate covered berries. Taste is sweet and sour dark berries and subtle cocoa. delicious.

Clear, ruby-magenta-tinted mahogany with a dark beige, raspberry-flecked head showing moderate to low retention.
Raspberries and cocoa powder in the nose are joined by lime-like Brett and peppery phenols. It begins juicy and lightly jammy, only to end dry, roasty and moderately acidic, both on account of fruit and dark malt (the yeasts not seeming to have much effect there). Light vanilla and a bit of fudgey-caramel attempt to soften things, but it's a big baker's chocolate and acidic raspberry bomb, to me.
In the mouth, caramel, cocoa and coffee meet raspberry juice and tart, limey Brett to a very strange effect. Light bread, powdery cocoa and raspberry acids are equally confusing on the finish. Slick, soft texture with low, fairly engaging carbonation and no alcohol or flaw. Love Allagash but couldn't finish a small glass of this bizarre concoction.

On tap at Mikkeller, San Francisco. Pours black with beige head. Lots of fruit, dark fruit, raspberries, some cocoa, medium sourness. Smooth and easy drinkable. Medium bodied. Enjoyed this one.

Sour plum and raspberry with lots of citrus. Pours black without much head. Fruity tangy finish. Tastes fresh like beatboxing for Slick Rick. Tap at birch and Barley.

4 oz pour on draft at ChurchKey. Black with light tan head. Aromas of cherries, raspberries, dark fruit, cocoa. Tastes of tart acidic notes, cherries, chocolate, light vinegar. Light body with a dry finish. Pretty tasty.

Draft at Churchkey. Poured a kind of dark brown color with a small tan head. Chocolate and raspberry soda notes, like the flavor you get from carbonated raspberry soda. Dark chocolate raspberry finish. Light tartness.
