Dark Ale Fermented with Brettanomyces and Aged on Raspberries
The liquid equivalent of biting into a raspberry-filled dark chocolate cake. Aromas suggesting mixed berry and roasty cocoa meld with flavor notes of tart raspberry, cherry, and subtle coffee. Even without the addition of chocolate, Ganache gains its cocoa notes from a robust grain bill featuring Special B, caramel malt, raw wheat, oats, our 2-row base malt, Midnight wheat, and black malt. This dark burgundy-colored beer is fermented in stainless with both our house yeast and Brettanomyces claussenii before aging on fresh, local raspberries. No utensils necessary.

Bottle to tulip.
Appearance: dark as night brown very close to black in color with a finger and a half of khaki foamy head which dissipated nicely to leave some light sticky messy lace
Aroma: dark chocolate, milk chocolate, tart and sweet red raspberries; light dark cherries, sweet coffee, roasted coffee, sweet woody tones
Flavor: blends the prior noted aromas to a fine sweet to tart and subtle roasty quality; finishes semi-sweet with tart notes of the berries and cherries
Texture: medium bodied, good as a sipper; light smoothness along the tongue but also some dryness and light tart assertiveness
Overall: a very nicely done dessert-like beer I would welcome again.

Bottle from the Epsom Circle Mart Dark brown with a veracious off white head. Lemony tart with bits of raspberry jam on the nose. Light bits of cocoa and caramel. Lactic with just a hint of earthy funk. Pretty tasty beer but its a stretch calling this cake like, there is very little sweetness.

500 ml bottle. Aroma is tart berries, earthy grain, and oak. Chocolate is mellow but they didn’t actually use any chocolate. Finish has a strong amount of tart berries. Mildly astringent oak. It is funky and sour and a tad more sharp for my own liking.

Why make a dark beer for no reason than just to make it dark? It throws me off when I drink it and it's just sour berries. Also, why make it ganache? There is nothing chocolate about it. You lie beer, you lie. Allagash, drop your head in shame. Oh, as a beer it isn't good either.

Sample at the Rhinegeist Rare Beer Fest 10/28/2017. Dark reddish-brown color with a medium light beige head that diminishes steadily to a film. Stringy lace. Aroma of funky yeast, tart fruit and malt. Medium body with flavors of tart berry, funky yeast and chocolate malt. The finish is tart with a chocolate and fruit aftertaste. Pretty good overall.
