A collaboration with our friends Dmitry and Eva from Baltic Bay Wild Ales in St Petersburg Russia, this beer is brewed with local rhubarb and foraged staghorn sumac. Exuberant strawberry and lemon character are refined by the introduction of a spelt farmhouse ale aged in wine barrels for 12 months for a maturity surpassing its age without sacrificing its character.

500mL bottled March 2021, drunk 5/27/22. Chill-hazed, peachy-brass. Ring of white bubbles. Wow very aromatic herbal nose is dense, soft mineral-rich sumac. Almost like vanilla-mint in its nature. Or actually, rooibos tea is more appropriate. Whatever the case, it's pretty incredible that it's still this expressive after 15 months. Almost a bite too dominant. No alcohol or flaw. Light lemony acidity from sumac and lactic character. Soft again in the mouth, chewy, and well-attenuated with spearmint, lemon, earth, mineral, spicy and vegetal rhubarb. What a wild ride this one is. Lingering acidity but never sharp or overwhelming. Ultra-soft texture. No flaw or alcohol. Pretty insane how much adjunct character still comes through after this long. This would have been brutally over-adjuncted when fresh.

EBF 2018: pours weird pinkish orange with a white head. Aroma is rhubarb funk. Taste is lightly rhubarb and funky. Weird beer. Good though.

Bottle sample at Release the Funk 5. Hazy yellow color. Aroma of fresh strawberry. Taste is vinous berries, soft sourness, light tannins. Nice.
