Cider made with a blend of heirloom and cider apples fermented with native yeasts and aged on lees in an ex-Amarone foeder for eight months. Inspired by the traditional sidra of Asturias.

Clear with a touch of haze. No head. Soft blonde.
Fruity, vivacious nose belies the foeder-aging. They didn't exchange lactic/malic/brett notes for the apple. Still fruity, bright, round and lively.
In the mouth it's not quite as vivaciously fruity, but still shows fleshy, red apple and more residual sugar than expected (mixing with a healthy acidity and landing on the finish). Not too much acidity, nothing harsh. Still preserves the integrity of the fruit with only slight oak accents.
