Aging this classic farmhouse-style saison in gin barrels imparts notes of white wine, oak, and dill, while the addition of fresh peaches adds succulent tropical and stone fruit flavors paired with a touch of sourness.

375mL bottle from the brewery, bottled June 2023, drunk January 5, 2026, as pictured.
Big, bright, peachy acidity and interesting funk (barnyard), with soft vanilla and an almost pickle-like character from the gin (commercial description says dill, and I agree). Fat malts seem to help balance, with honey and bread, but don't bog down the brightness, though I'm a bit concerned about the potential sourness. No alcohol noted.
Yeah, it is sour, but perhaps not too much so. It's big and bold and juicy-sour up front but it's all peach acidity and softer lactic with zero acetic. Gin gives floral notes that are interesting/unusual and work well to balance the juicy peach and light vanilla and honey notes. Incredible amount going on here and the peach isn't overdone, nor is the gin, nor acidity. Wish the funk from the nose was also in the flavor, but hard to complain here. Still a sumptuous, malty texture after almost 3 years.
