We cold pressed Virginia Crabapples from our Ellensburg Orchard, fermenting the juice. This bitter-sharp apple goes back to the colonial period and was popular for cider making in the late 1700's. We allow the cider to mature for five months to one year, creating a wonderful semi-dry "Single Varietal" cider with a tart crabapple kick!

Bottle from Press online. Twas in their seasonal pack, was new to me & I didn't get picky.
Super cloudy on arrival, so I let it settle. Three months later & there's a good bit of cake but it's still quite turpid. Mojito glass at home.
Strong lingering fizz, a deep gold. Initial pours actually have some clarity.
Smell is an odd yogurty, herbal, papaya, apple/berry juice box blend. Day two it's more like a sweet & starchy cookie.
Under attenuated, but slaps with astringency & bold sourness. Earthy, veggie, slightly tropical. Bittersharp, mildly sweet, big & lingering bitter citrus rind, yeasty, medium high acid, bright.
Kinda good but way uneven & difficult to finish.
I later learned that this is $30 before discount & shipping...
