∞ (MUGEN - GERMAN HOPPY PILS)

A LIGHT, EASY-TO-DRINK, AND EXTREMELY REFRESHING PILS, SHOWCASING THE WONDERS OF AROMATIC GERMAN HOPS.

[Character]
A crisp lager, using modern German hops for a slightly more aromatic and fruity character than more traditional Pilsners, this beer is light and easy drinking, blending new with old for a refreshing spin on the world's most widely enjoyed style.
[Food Pairing]
White gourd ("shirauri") with herb infused yoghurt salad, oven baked freshwater fish and potato, minced katsu with lemon peel and black pepper
[Naming]
One glass, and then another. Before you know it, time passes as dusk approaches, and the stars twinkle in the night. But still, you're not tired of this beer.

"Mugen" means infinity, and that is what this beer is attempting to be: infinitely drinkable. With a clean base and just the right amount of hops, "∞" ("Mugen") is a beer that can be enjoyed without end.
[Brewer's Voice]

The first of a pair of hoppy pilsners, we bring you this German-inspired hoppy lager. For these beers, we wanted to play with a mix of modern and classic approaches, and for the German edition we took a classic approach to the malt and brewing techniques, but used newer German hop varieties and dosing rates. The malt bill was kept simple, with German grown pilsner malt and just a little bit of Sour malt for Ph adjustment. A small volume of bittering hops was used, with a more modern approach to the aroma hop contribution. For these aroma hops we went with Saphir hops, a relatively recently bred hop that contributes spicy floral and fruity tangerine notes to the beer. With this we paired Hallertau Blanc, a hop that was released just over 10 years ago as a cross between Cascade and Hüll Melon Hops. This hop offers a white wine-like grape and passion fruit-like character and, along with the Saphir, combines to create a floral character with notes of the more modern fruity tropics. We like to think that this beer could be a glimpse at what a German pilsner could have looked like today if they’d had some of these modern hops generations ago.

Can from Fujii Daimaru. Bright citrus hops on the nose, orange, herbs, white grapes. Spice. Light, crackery malt. Medium gold with light hazy and a low head. Bright citrus and white grape hop flavor. I get the Sapfir. Clean, light malt. Crisp bitterness. Quite like an Italian Pilsner.
