Sparkling Medium Dry Fine Cider

It’s one of the most complex and rewarding cider that Little Pomona claim they have ever produced. 2023 was a cool year, making it difficult for the later, highly phenolic apples to show their charms. James and the cider making team decided to give nature a helping hand by borrowing a technique called keeving, helping them retain some of the natural sugars in the finished cider. They further slowed the fermentation by racking the cider on multiple occasions, the 5th of these into bottle where the cider completed its fermentation. Initially the lively sparkle serves to counteract the sweetness but as it settles down, the cider begins to open up to reveal and ever evolving spectrum of flavours, aromas and sensations with each sip of the glass – white tea, peach, leather, baking spice, tobacco leaf and much much more. Alc 5.9% vol.

750ml bottle. Opened with a pop. Hazy orange gold colour, white foam head that dissipates to a thin rim and aroma of apple, barnyard funk. Taste is tangy, appley, stone fruity, barnyard, funky, with some drying tannin. Medium bodied, light carbonation, drying funky finish. Nicely drinkable.
