750mL bottle shared with Blisscent, at the tasting room on 4/29/16.
Stunning appearance boasts a massive, white, very well-retained head topping a multilayered orange/yellow-sunset-like body with a gentle haze.
Oak and brett mix in the front of the nose, with very light citrus and "dry" wood notes giving way to a surprisingly still-apparent hoppiness. Lightly dank, spicy and moderately citric hop notes also instill a touch of pineapple-mango which works wonderfully well with brett. A hint of sulfur rises up and completes the funky picture. This stuff is still very bold and sour, after resting in the bottle for over a year. Between the strong wood, fair amount of lactic acid and strong hop presence, it’s definitely not your typical sour, but the elements are all enjoyable, that’s for sure.
In the mouth, it’s still given over to the hops, with dry pineapple and citrus notes still apparent. Moderate bitterness combines with light lactic sourness and moderate brett tartness. Strong wood dryness, with perhaps a wine-like dry fruitiness. The texture is a phenomenally tight, spritzy carbonation creating a creamy-like mouthfeel. Even with that, there’s just a bit too much aggressiveness for me; hop, wood, acid all still need time to mellow and homogenize.
