When making a kettle-soured beer, the brewing process is stopped in the middle of the boil, and a souring agent is added. In this case it’s lactobacillus bacteria, and it’s allowed to sour the beer right in the boil kettle. Once it’s reached its target pH the kettle is fired back up and what’s inside is boiled, killing all of the bacteria and stopping the souring process. Then the beer is finished just like a normal beer. Techno Viking is very light and refreshing. Kettle souring gives it a nice tartness that’s not overwhelming or mouth puckering. The light German Pilsner malt backbone and mild tartness make this a very approachable and drinkable beer and a great introduction to the wonderful world of sour beers.

Sour milk, wheat malt, and straw aroma. Medium yellow with moderate but short-lasting head and moderate effervescence. Lightly sweet lemon, wheat malt, moderately sour lactic and citric acid, and mildly bitter straw flavor. Good body.

Canned November 17th 2020.

Pours a hazy pale gold, decent head of foam at first, leaves the scene quickly.

Smells tart, lemon, earthy malt, smells like a Berliner Weisse.

Taste is lemon on the tart side,(imagine that) earthy malt, salt is minimal, fruity beyond lemon.

Light bodied, easy drinker. I like!

A little less tart than the German berliners that I've had, but very mild and unassuming in all other ways. Not bad just nothing special about it at all.

16 ounce can from Wine Cellar dePere, 4/8/19. Uh uh... strong whiff of paint thinner immediately upon opening. Hazy pale orange, thin fizzy head, poor retention. Aroma of tart lemon juice and pale malt. Thankfully that paint thinner thing seems to have faded. Taste is juicy lemon and orange, pale malt. Hints of salt and even fainter hints of lacto. Honestly comes across as lemonade in the very back end. Thin bodied, low carb. Decent.

On tap at Drekker - Brewhalla, pours a clear pale golden with a small white head. Aroma brings out lots of lacto upfront, with gentle acidity. Flavour is fairly subdued, with lots of yogurty lacto dominating, with only gentle acidity and minor tartness. If you like yogurt sours, then you may dig this. It's alright.
