For this special release, Almanac set out with the goal of making a beer where every ingredient and process contributed to one ambition: creating layers of apricot flavor. Brettanomyces yeast creates tropical and stone fruit flavors in the barrel, which they matched with a small mountain of San Joaquin Valley apricots and finished with a delicate dry-hop of aromatic hops. From the yeast, to the fruit, to the hops, every aspect of this beer adds apricot flavor and aroma – resulting in a delicious wild ale.

OnTap cloudy light yellow peach color. Foamy sticky white head. Very prominent Brett aroma with light stone fruit character. Some apricot in the flavors but mostly a light bodied fresh hoppy brett beer. Very tasty

Very very hazy white amber color. Lovely sour nose with oak, Brett and apricot notes. Lovely light mouth of Brett, oak and apricots. So well balanced and puckering tartness. The fruit is so well integrated. Loving apricot and oak finish. Awesome. Just what I expected and it delivered.

Sample at GABF 10/08/2016, thanks to my sis for assistance with note-taking. Pours a hazy yellow-orange color with a medium white head that diminishes steadily. Strings of lacing. Aroma of apricot, oak, hops and malt. Medium body with flavors of brett yeast, funky apricot, oak and malt. The finish is funky yeast and apricot. Good beer all around.

Bottle from Brewer’s Haven. Pours a golden orange color with a thin white head. Fruity apricot aroma with a little funk in the background. Taste is heavy in the sour with good supporting apricot fruity sweetness. Mild acidity.

375mL bottle, pours an opaque cloudy orange with a small white head. Aroma brings out fresh apricots and light brett funk. Flavour brings out lots of musty notes, faded apricot, brett funk and biscuity notes. Not as complex as the regular Saison de Brettaville - the fruit is rather muffled. Good stuff nonetheless.
