Our Farmhouse Ale showcases pilsner malt and Connecticut-grown flaked spelt. We utilize Citra, UK Goldings and a small amount of New Zealand dry hops to create a white wine/white peach aroma and flavor. Fermentation with a Belgian yeast strain further elevates the fruity character and leads to a dry finish.

Undated can drunk 8/17/25.
Mostly clear, muted brass-golden. Large, off-white head slowly to cover.
Some good acidity in the nose similar to stone fruit character but also some unwanted phenols. Nothing heavy and I suppose few outside true saison snobs would care. But it's not up to the real Belgian stuff level. Lots of white pepper, light clove.
Really nice body, texture, malt depth and attenuation. This helps ward off the phenols they've created with what seems like a bit higher fermentation temp than I'd prefer. But there's still a bit more clove and heavy white pepper than I'd prefer. Still, a noble effort and this brewery is obviously quality as evidenced by the very nice malt depth and attenuation.
