Après un passage par le froid (-30°C pendant 1 mois), les moûts sont soutirés au fur et à mesure de la décongélation. On Obtient alors un sirop de pomme très concentré en sucre. Ce sirop va fermenter une seconde fois pour atteindre un « vin » de pommes à 10 à 12 % vol d’alcool.

Sampled from bottle @ Hey Julien is back and Dean’s floor is moist tasting. Clear amber color, no head. Smell and taste are both quite sweet, apple, dry apple finish, dried apple flavors. Solid ice cider.

Bottle at THT. Clear amber with no head. Sweet dry apple notes, very light funk, lots of apple peel, bitter herbs, lots of dry fruity apple notes, With some strange balanced sweetness that still leaves a soft bitterness and sour touch. Full bodied. Love it.

Bottle at THT. Pours clear amber with no head. Aroma of sweet red apples and light gone off apples. Flavour is light heavy sweet. Medium bodied with soft carbonation.
