A beautifully layered farmhouse-style ale, Iphias spent twelve months aging in a foeder where it naturally developed complex acidity and bright notes of stone fruit and citrus. It then underwent a six month refermentation on peach purée, amplifying its fruit character, while the addition of aromatic ginger lends earthy spice and added depth. Bottle-conditioned for six months before release, Iphias is a balanced golden sour that's lightly dry, and fruit forward.

750mL bottle, pours a cloudy blonde with a small white head. Nose has plenty of spicy ginger upfront, with some bugs, subdued peaches, and soft oak. Flavour is quite tart, with sour, juicy peaches, mixed bugs, nice incorporation of the ginger—potent without stealing the show—and reasonable acidity. Cohesive, good bugginess, good acidity. This works pretty well.

Pale, and slight haze. The aroma has some ginger up front, a bit of peach. Bright fruit. The acidity is medium, a bit yeasty. The ginger comes through in the finish a fair bit, making it refreshing and combining well with the peach.

Poured from 750mL bottle. Hazed blonde with small white head. Citrusy lime-like sour with feint ginger, light peach on the finish. Decent.

750mL bottle. Pours a hazy blonde with a small white head. Lots of rustic, farmhouse funk and musty peaches on the nose. Flavour has a nice rustic yeast character, musty peaches, some sharp ginger accents near the finish that are a nice touch. Solid, well-integrated.
