Inspired by the more modern takes on the West Coast IPA coming out of California, we present our first take at a big, boldly hopped Westy hit with more modern hops: Cryo Citra and Simcoe. Not what you expect, but definitely what you want.
What You’ll Love About It
West Coast IPA is a beautiful beer, but many of our customers find its aggressive pine and citrus notes to be "too hoppy." We've forgone those traditional C-hops to bring the fruit-forward notes of modern American hops for a beer that trades bitterness for balance. Like a wee bridge between the old and the new.
How It's Made
100% Pilsner malt and Cali Ale yeast are both selected for their ability to get out of the way and allow the hops to shine. Cryo Citra and Simcoe used at 4.25 lbs per hectolitre through bittering, whirlpool, and dry hop additions.

A lightly hazed golden ipa with a thin creamy lacing white head. In aroma, nice crisp biscuit malt with resinous piney hops, light mineral notes, citrus, pleasant. In mouth, a nice biscuit malt with resinous piney hops, light citrus, light mineral notes, pleasant. On tap at Kingston location.
