At the beginning of 2023 we received two fresh Laird’s apple brandy barrels that we knew would be the perfect set to age our big imperial stout in without any intention of blending, and to let the barrels work their magic. 16 months later it’s time has come. These expressive barrels showcase all the decadent notes of bakers chocolate and fudge we get in our big stout base, alongside a mild almond nuttiness and baked apple flavor. Sometimes it’s the simplest ones that we end up talking about the most.

Bottle at Peders Barreled Souls TTO (02/08/2025) - Thanks Grant for the birthday beer! Dark sweet and lightly roasted malty with notes of chocolate, some caramel and sticky toffee apple sweetness from the brandy aging coming through, nice body and mouthfeel, dark sweet malty into the close. Lovely.

Bottle, 355 ml, shared with Luka and MiroB. Black with tan head. Intensive dark chocolate, apple brandy, sweetish. Bitter finish. Smooth. Medium to full bodied.
