The intense and complex sour character of this beer is developed in oak Foeders containing select cultures of Lactobacillus, Pidiococcus and wild yeast. The process is slow and delicate, regularly taking a year or more. Once our brewers have decided it’s ready, we blend the soured beer into hand-selected oak barrels with fresh peach puree, where it undergoes additional sour fermentation and aging.

Bottle on the RBSG bus, courtesy of Craig. hazy, millky pale golden with slight, wispy head. Big strong stone fruit aroma, some tartness. taste adds a few more elements like wood barrel, yeast and general sour funk. Some lacto sweetness too. Batch #1

Bottle - Soured stone fruit and a bit dirty. Pale gold with a small white head. Light soured stone fruit, nice acidity and bone dry.

Bottle at What The Funk V. Pours a hazy yellow gold with small white head that lasts. The aroma is strong peach flesh, funk, and oak. Thin body, tart peach, light funk, good.

375 ml bottle into tulip glass; batch #2, bottled in 3/2016. Pours lightly hazy/cloudy golden yellow color with a 1 finger dense white head with good retention, that reduces to a thin cap that lingers. Light spotty soapy lacing clings around the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of big juicy peach, tart/sour lemon, lime, green apple, apricot, white grape, wheat, cracker, hay, straw, oak, and musty funk; with lighter notes of white wine vinegar, pepper, leather, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic yeast, peaches, oak barrel, and moderate pale malt notes; with great strength. Taste of big juicy peach, tart/sour lemon, lime, green apple, apricot, white grape, wheat, cracker, hay, straw, pepper, oak, and musty funk; with lighter notes of white wine vinegar, vanilla, leather, and yeast/oak earthiness. Moderate fruity/acidic sourness and yeast/tannic oak spiciness on the finish; with lingering notes of peach, lemon, lime, green apple, apricot, white grape, wheat, cracker, hay, straw, pepper, oak, musty funk, vanilla, and yeast/oak earthiness on the finish for a white. Damn nice complexity, robustness, and balance of fruity/funky/acidic yeast, peaches, oak barrel, and moderate pale malt flavors; with a great malt/sour/spiciness balance and zero astringent flavors after the finish. Light-moderate dryness from acidity/tannic oak spice as well. Medium carbonation and body; with a very smooth, moderately crisp/acidic/tannic, and fairly creamy/grainy balanced mouthfeel that is great. Alcohol is very well hidden with minimal warming present after the finish. Overall this is an excellent fruited wild ale. All around great complexity, robustness, and balance of fruity/funky/acidic yeast, peaches, oak barrel, and moderate pale malt flavors; very smooth, crisp, and easy to drink with the balanced acidity. A very enjoyable offering.

Bottle from Colonial Spirits. Slightly hazy deep yellow with a decent sized but short lived bubbly white head. Tart acidic fruitiness on the nose with a touch of earthy funk. Flavor is lactic and citric tartness with brushes of earth and light funk. The peaches come through, but in a macerated fermented way. Mouth puckering lingering sour after every sip. Sour patch kids in a glass right here, pretty tasty if thats what you are looking for.

At the brewery during GABF week, 2015. Gold color, and no head. Aroma has peach and lots of it, some Turkish apricot flavor. Sour yeast, and the sour flavor is surprisingly intense, very near a lambic. One of the highlights of the weekend in Denver.

Light golden color. Very sour nose but didn’t get a lot of peach, more cat piss and oak than anything. The mouth is medium body decent, with puckering sour. The peaches are fairly present in the mouth, but overall it was a bit simple. Lingering oaky finish. Nicely made but not as complex as the base beer.
