This cider stylistically borrows from the French wine making tradition Pétillant Naturel. It is made by bottling the cider just before it goes dry, allowing it to finish fermentation under pressure. Pours mostly clear, pale, a soft haze. Bone dry, lean pale apples, mellow funk, a little bitter skin, grass, lemon, cobwebs. Spritzy, massaging carbonation. Dry, quenching finish, more dried apples and modest bitter peel, nips of acidity. Super drinkable.
