Chapel Perilous is more than just a French Saison, 'tis THE French Saison. It's layered, it's dry, it's expressive, it's nuanced, and damn if it isn't so good we can hardly believe it ourselves. Every time we take a sip, we chase it with another just to prove we had it right the first time.

Pale amber. Opaque. The aroma is yeasty, bretty, with some pedio. A bit yeasty on the palate. Sweetish. Ok.

Bottle pour at Barrel Fest 2025, pours a hazy peachy golden with a small white head. Aroma has a nice, rustic saison yeast expression, plenty of brett, and a touch of wood. Flavour is bright, with a nice bretty funk, rustic saison yeast fragrance, and a touch of acidity. Finishes dry and bretty. Quite nice.

Bottle pour at Bottle Fest 2025. Pours murky dull blonde with a white head. Pleasant rustic yeast character on the nose. Flavour has a nice yeast expression, semi-dry with some bubblegum esters, dry caramel. Nice.
