Barrel Aged Flemish Red

Elliot is our second mixed fermentation beer, crafted with care and patience. Aged in oak wine barrels for an incredible 32 months. On the nose, expect candied plum, raisin, chocolate cocoa, and a medium sourness that intrigues the senses. The flavor mirrors these aromas, with each sip unveiling layers of complexity. Amber-brown. Earthy. Light chocolate. This is good. Some sweet balsamic, but not oxidized. Solid work.

Bottle pour at Barrel Fest 2025, pours a deep dark brown with a small beige head. Aroma has some woody perfumey notes, wood, and some Worcestershire. Flavour is pretty complex, with wood, Worcestershire, light perfume, and some red fruits. Nicely constructed, finishing woody, gently fruity and not too acetonic. Very good.

Bottle pour at Barrel Fest 2025. Pours murky brown with a beige head. Dark sugars, raisins, and a bit of balsamic. Flavour has lots of raisins, dark sugars, a bit balsamic; very tart on the finish. Nice.
