As the fall nears, we open our doors to donations of fruit from backyard trees all over the city. The fruit is collected, sorted and hand-pressed before fermenting using the naturally occurring wild yeasts from the apples and pears and aged 3 years on the lees.
A true Calgary cider. A first of its kind. With qualities of champagne, marzipan, honey dew and patience.
You can taste the community of this city in every sip.

Aroma: dry and funky.
Taste: a bit thin, funky, tannic, apple seeds.
Overall: it is a bit faded, but it's definitely good for a Canadian wild cider.

Pale. This is fairly dry, nice apple accent, with a shot of sweetness. Pretty lively flavour, actually.

750mL bottle, pours a hazy bright golden with a small white head. Aroma has a nice farmhouse character, crisp apple skins, and very light acidity. Flavour is funky and bright, with a great farmhouse character, crisp apple skins, and a touch of champagne-like effervescence. Hard to believe this is 8 years old. Really great wild yeast character. Excellent.

Poured from 750mL bottle. Lightly hazed pastel gold with minimal white head. Light funk, mild sweet apple note, feint pear, surprisingly nice.

750mL bottle. Pours murky gold with a small white head. Great funk and slightly tannic apple skins on the nose; gentle apple cider vinegar. Flavour is pretty similar; funky, good skins, gentle acidity. Very nice wild yeast character. Very nicely done.
