Ticonderoga was fermented cool and slow then aged in rye and Madeira barrels from Whistle Pig. The result is a cider that is dry, complex, and sophisticated. Our Ticonderoga has a dry, woody character with spice, a touch of salinity and plenty of fruit-forward notes; think of a barrel-aged saison.

Cute little bottle from Covenhoven. Baby Duvel glass pour. Pale gold, just a bit of haze. Dusty yeast, more pear then apple, sweet white wine, brine, gum. A few more descriptors as it warms & opens up & up. Bittersweet & leaning towards sidra. Lemon, market apple sweetness, boozy, acetate, yeast, paper, goopy, mild carbonation. Wine is there, but I can't seem to find the rye. I'm not excited about this.

On tap at Conservatory. Pours a clear gold with small white head that diminishes to nothing. The aroma is strong apple skin, spice, oak. Thin body, oak, pear, apple, boozy, nice lingering dry finish, very good.
