This complex brown sour beer has been brewed in the traditional style of West Flanders, Belgium. Aged in large oak foudres (vats) for 18 Months, a collection of wild yeast and bacteria go to work, slowly transforming the beer. The result is a unique beer, with a chocolatey-malt base mixed with sherry, leather, tobacco and a hint of smoke. Lactic acid bacteria add a distinct tartness, and Brettanomyces provide that classic wild funk.

2021 bottle. More brown than red. Clear with a pale beige wisp that's very soon gone. Aroma of red wine vinegar, oak, some cherries. Quite sharp with some earthy notes softening the acidic and woody aspects a bit. Twiggy as well as oaky at the end. Good but a little too acidic for me.

Bottle. 2021 Aged in wine barrels. Mahogany beer with a dark cream head. Light sour and wine aroma with dark fruit, light acetic notes, and light oak. Sour and acetic flavor with red wine, dark fruit, and light oak. Medium bodied. Sourness and acetic notes linger with red wine, dark fruit, light oak, and dark fruit.
