Spontaneously fermented Inceptus (Latin for “beginning”) is a wild ale of remarkable complexity. Imbued with the brewery's own wild Georgia yeast strain and matured for months in North Georgia wine barrels, this American sour will make you pucker with delight.

2016 vintage, sampled late 2022.
Pours slightly hazed blonde, small white head. Scent is full, citric, US style acidic aroma's, but more on the fruity / oaky side, and thus more complex. Taste is Tart, bit butery, very oak-forward. Some citrus, as well as green treefruit (apple comes to mind). Bit thin though - and not much aftertaste. OK, but needs more intensity and length.

On tap at the brewery. Hazy reddish orange with small white head. Nice funky fruit, acetic, some grapes, barrel, bit vinous. Medium bodied.

Smooth. Smells super sharp but is mellow with notes of peaches. Not super complex on the finish. Vinous

Bottle at the source courtesy of Joran, a huge thanks! Hazy golden color, white head with good retention and lacing. Aroma has light funk, overripe stone fruit, dust. Taste is funky summer fruit, subtle white pepper. Well done.

375ml bottle thanks to rich. pours out a hazy gold topped with a small head. nose is light fruit notes some vegetables. Taste is more of the tart funk and light fruit notes.

Bottle share, thanks Boisebeerguy. Pale orange, light haze. Small ring of white head. Nose is fruity, oak, bits if tart funk. Tastes sweet at first, light sour. Fruit and oak. Sweet peach flavors. OK.

Bottle share hazy dingy yellow light beige soft wheaty musty tartness mild and soft. Pleasant and lightly dart.

Bottle thanks to Craig. Pours a cloudy orange gold with no head. The aroma is funk and citrus. Thin mouth, tart, stone fruit, light funk, oak, very nice.
