Fidalgo is an exploration of the softer side of mixed fermentation. Instead of mouth puckering sourness, it relies on a palette of funk, deep red fruits and brown sugar like Sweetness. Aged for 2 years in a mix of bourbon and Rye barrels this dark Ale was further conditioned on hundreds of mission Figs freshly harvested sea salt and whole vanilla Bean.
