Fidalgo is an exploration of the softer side of mixed fermentation. Instead of mouth puckering sourness, it relies on a palette of funk, deep red fruits and brown sugar-like Sweetness. Aged for 2 years in a mix of bourbon and Rye barrels this dark Ale was further conditioned on hundreds of mission Figs freshly harvested sea salt and whole vanilla Bean.

Bottle pour shared by Jow--thanks, Joe! Opaque, dark brown with ring of head and no lacing. Aroma is strong dark tart fruits. Taste is very tart (not quite sour) fruit. Smooth texture, soft carbonation and finish as taste. More tart than I care for. Well made but not my bag.

Amber, clear, nice beige head.
Fruity, tart, light Brett but mostly lacto. Oak and such.
Juicy and fruity with soft caramel, oak, tart lactic and brown sugar. Sweet, tart, medium bodied. A bit forceful.

750 ml bottle. Jow. Thank you Joe. Aroma is spicy figs, plums, mild funk.
Flavor is a match to the aroma. Mildly funky and tart. Respectable.

Bottle at the tasting. Murky red brow pour. Nose is thick red fruit and vinous notes tastes of figs, dates, cherry, bread, balsamic, and red wine. Fast and enjoyable

750mL bottle, pours a deep dark reddish brown with a small beige head. Aroma brings out gentle tart fruits, wild yeast, and a little bourbon — vert gentle vanilla in there. Flavour is subtle and cohesive, with wild yeast, gentle oak, vanilla and very gentle tart dark fruits. Cohesive and subtle, imparting a nice wild, oaky character on the finish. Gentle acidity and very gentle tartness. Very good.
